payments of toll and fair charges on cattle and pig sales suggests that butchers and drovers visited the farm to make their purchases, rather than animals being driven from the farm to local fairs. Indeed the only reference to livestock sales at local fairs occurs in 1820, when two elderly and superannuated draft horses were driven to several Cardigan- shire and Montgomeryshire fairs before finally being sold in Newtown towards the end of the year.1* As with cattle sales, pig disposals in- cluded both live animals and carcasses. Weaned pigs were sold to labourers and drovers for fattening, while butchers purchased both live fattened animals and salted bacon sides from the demesne farm. DOMESTIC CONSUMPTION Besides cash sales from the farm, a substantial proportion of farm output was consumed in the mansion by the family, their guests and servants. Table V indicates the volume of household consumption of farm products, including meat and cereals distributed to the poor in the early part of the year. Thus, taking an average over the five years, the output of approximately one third of the demesne farm was required to satisfy the needs of the Pryse household.17
